mother’s day











We had a lovely mother’s day this year. I made tofu benedict and strawberry parfaits for brunch. We played Rummikub and watched A Shot in the Dark and spent a nice relaxing day with my mom. Hope all you mamas out there had a wonderful day full of celebration and love.

    Aaah, you guys play Rummikub too! I thought I was the only one who liked it, haha. My family LOVES that game, and we’ve been playing it for decades- glad to see it’s a tradition in your house too 🙂

      the tofu benedict is the one from Vegan Brunch, nearly exactly.

      the parfaits are just vanilla cake, any will do, crumbled and layered with strawberries and vanilla cream. here’s the vanilla creme recipe:

      1 container soy cream cheese
      1 box silken tofu
      1/2 cup soy milk
      1/2 cup sugar
      1 tsp vanilla

      put all ingredients in a blender and blend until smooth.
