mother’s day
We had a lovely mother’s day this year. I made tofu benedict and strawberry parfaits for brunch. We played Rummikub and watched A Shot in the Dark and spent a nice relaxing day with my mom. Hope all you mamas out there had a wonderful day full of celebration and love.

Aaah, you guys play Rummikub too! I thought I was the only one who liked it, haha. My family LOVES that game, and we’ve been playing it for decades- glad to see it’s a tradition in your house too 🙂

it’s a sort of vanilla cream. tofu & vegan cream cheese & sugar.
I love this post. I’m not able to spend mothers day with my mum, so this is a nice way to live vicariously through you. Such a lovely day.

the tofu benedict is the one from Vegan Brunch
, nearly exactly.
the parfaits are just vanilla cake, any will do, crumbled and layered with strawberries and vanilla cream. here’s the vanilla creme recipe:
1 container soy cream cheese
1 box silken tofu
1/2 cup soy milk
1/2 cup sugar
1 tsp vanilla
put all ingredients in a blender and blend until smooth.
Sounds like a really lovely day. I’m sad that I’m so far from my family. But I did get to Face Time with my mom for a bit.
