Morning Glory

It’s no secret that breakfast is my favorite meal of the day. I have to admit though, I’m quite the creature of habit. Nearly every morning it’s sourdough toast with earth balance and nutritional yeast. And of course that first glorious cup of coffee.

I’m trying to shake things up a bit. I’m not proposing I give it up, I love it too much, but rather have a bit more variation in my breakfast menu. Recently there have been bowls of oatmeal, English Muffins with peanut butter and bananas. I need more ideas though. Something that can be made in around 10 minutes or so, but enough fuel to make it to lunchtime.

vegan buttermilk pancakes On the weekend, when there is a bit more time for cooking before rushing off to work, I’ve fallen in love with these vegan buttermilk pancakes from Your Vegan Mom. They’re fantastic. We’ve had them two weekends in a row. Prior to that I don’t recall the last time I even wanted pancakes. They’re just so fluffy and wonderful.

What is your favorite weekday breakfast?

    I don’t know if I can be any help to you because personally my favorite and only thing I ever eat for breakfast is overnight oats! D: But I’ve been wanting to try this Rawsome Breakfast Mix for so long. Also, I can suggest making granola a few days ahead? 🙂 Also, have you had overnight oats? 🙂 Yum!

    I like to eat rice puffs with almond milk. Sometimes I put a tiny bit of agave nectar on top, because I like things sweet! Those pancakes look amazing, Alix, seriously. I LOVE pancakes. This weekend, Mack took me to Swinger’s, and I had the vegan chocolate chip pancakes…. heaven on a plate, seriously. Woah.

  3. I second the overnight oats. I either have those or a green smoothie for breakfast every day. There are endless combos of oats…I usually switch between pumpkin oats with cinnamon and ginger in it and blended blueberries with almond milk. Sooo good in the summer when it is boiling out and you want a cold but filling breakfast.

    Unfortunately the recipe calls for 2 eggs… but I’m curious to know what vegan alternatives you might have.
    I like muffins because you can make them at night and enjoy them as a quick breakfast for at least a few days, depending on how quickly your boyfriend (or husband) demolishes them 😉

    I usually eat kamut puffs with berries, almond milk, and dry roasted almonds when I’m in a rush. I’m not very fancy, hehe 🙂 I really like buckwheat and flax pancakes though! I try to experiment with all types of grains/flours… I love dark rye toast with strawberry balsamic ‘cream cheese’ (homemade), sliced strawberries, and spinach too.

    I’m pretty lazy with breakfast. I have a huge green smoothie (with hemp protein) or sometimes I go without. When I have someone else to cook for though I go all out with pancakes, tofu scramble, roasted sweet potatoes, fresh juice, etc. Brunch foods are my favorite to cook! Love this English muffin, pb, banana idea, so easy and quick! Sometimes I will have toast with almond butter, agave, and cinnamon.

    whole wheat bagel with hummus, avocado, sprouts (or arugula), tomato and cucumber. Super good if you’re feeling like somethin’ green. otherwise I’m an oats gal myself- coconut, currants, flax seeds & fresh berries when the season hits. delish!
